These are cottage cheese cookies, crispy on the outside and soft on the inside, and they got their name from their characteristic triangular shape with slits. You will need: 200 g cottage cheese (9% fat), 180 g butter, 1 egg, 250-270 g flour, 1 tsp baking powder, 150 g sugar, 10 g vanilla sugar.
Instructions: Grate the cold butter, mix the flour, baking powder, and vanilla sugar, then quickly rub everything into crumbs. Add the egg and cottage cheese, knead the dough, and wrap it in plastic film. Refrigerate for half an hour, then roll out and cut the dough into circles.
Dip each circle on one side in sugar, fold it in half, dip in sugar again, and fold again. Dip the finished triangle in sugar one last time and make slight cuts or an imprint with a fork. Place the cookies on parchment paper, bake for 15 minutes in the oven at 180 degrees Celsius, then reduce the temperature to 160 degrees Celsius and bake for another 10 minutes.

You will need: 200 g cottage cheese, 200 g butter, 2 egg yolks, 2 cups flour, 2 tbsp water, 1 cup sugar.
Instructions: Grate the frozen butter, add cottage cheese and sifted flour. Rub everything into crumbs, then mix with egg yolks and water. Wrap the dough in plastic film and refrigerate for half an hour, then roll out and cut into circles.
Dip each circle in sugar, fold it in half, and repeat this once more. Make cuts and dip the finished "feet" on one side in sugar again. Bake the cookies for 20-25 minutes in the oven at 180 degrees Celsius.

You will need: 350 g cottage cheese, 150 g butter, 1 egg, 200-220 g flour, 1 tsp baking powder, 1/2 lemon, 80 g sugar.
Instructions: Mix cottage cheese, soft butter, and egg, add lemon zest, then flour with baking powder. Knead and roll out the dough, cut it into circles. Dip each circle in sugar, fold in half, and do this once more. Bake the goose foot cookies for 25-30 minutes in the oven at 180 degrees Celsius.

You will need: 300 g cottage cheese, 200 g butter, 1 egg, 400 g flour, 3 tbsp cocoa, 1 tsp baking powder, 100 g sugar, vanilla sugar, ground cinnamon.
Instructions: Whisk cottage cheese with soft butter and egg, separately mix flour with baking powder and cocoa, and combine both mixtures. Knead and wrap the dough in plastic film, refrigerate for 30 minutes, then roll out and cut into circles.
Separately mix sugar, vanilla sugar, and cinnamon to taste. Dip each piece into this mixture, fold in half, dip again, fold, and dip one more time. Place the resulting goose foot cookies on parchment paper and bake for approximately 20-25 minutes in the oven at 170-180 degrees Celsius.

Instructions: Mix flour and salt, cut the cold butter, and rub them into crumbs. Add medium-fat cottage cheese and knead an elastic dough. Roll it out and cut circles.

Instructions: Blend the tofu, finely chop the cold spread, sift flour with baking soda and salt. Knead the dough from all these ingredients, wrap it in plastic film, and refrigerate for half an hour.
