Ingredients
- 2 zucchini;
- 1 eggplant;
- 2 bell peppers;
- 2 tomatoes;
- 1 carrot;
- 1 onion;
- 2 cloves garlic;
- 2 tablespoons olive oil;
- 1 teaspoon dried Italian herbs;
- 1/2 teaspoon ground black pepper;
- 1 teaspoon salt.
Step-by-step recipe
- Wash, peel, and coarsely chop all vegetables. You can add any other vegetables you like – potatoes, sweet potatoes, beets, pattypan squash.
- Press the garlic and mix it with olive oil, Italian herbs, ground black pepper, and salt.
- Thoroughly mix the vegetables with the aromatic mixture until evenly distributed. Place the vegetables in the air fryer basket or an oven-safe dish.
- Cook the stew for approximately 22-25 minutes in the air fryer at 190 degrees Celsius (375°F). Stir the vegetables once halfway through cooking.
- Optionally, sprinkle the finished stew with chopped herbs or grated cheese.
