For the wings:
- 1.2 kg chicken wings;
- 1 teaspoon salt;
- 1/2 teaspoon ground black pepper.
For the batter:
- 1 chicken egg;
- 180 ml cold water or sparkling mineral water;
- 120 g all-purpose flour;
- 1/2 teaspoon sweet paprika;
- 1/2 teaspoon dried garlic.
For the breading:
- 180 g all-purpose flour;
- 80 g cornstarch;
- 1 teaspoon sweet paprika;
- 1 teaspoon dried garlic;
- 1 teaspoon dried onion;
- 1/2 teaspoon dried oregano;
- 1/2 teaspoon ground black pepper;
- 1/2 teaspoon ground red pepper;
- 1 teaspoon salt;
- vegetable oil for frying.
Step-by-Step Recipe
- Rinse and thoroughly pat dry the chicken wings with paper towels. If necessary, cut them at the joints, remove the wingtips, season with salt and pepper, and let sit for 20 minutes.
- For the batter, whisk the egg, pour in the cold water, add the flour with spices, and mix until smooth, ensuring no lumps. A whisk works best for this!
- In a separate bowl, combine the flour, cornstarch, and all the breading spices.
- Dip each chicken wing into the batter, let any excess drip off, and then thoroughly coat in the breading mixture. For a more textured crust, gently press the flour mixture onto the wings with your hands.
- Fry the wings in small batches for 9-10 minutes in well-heated vegetable oil until golden brown. Afterward, transfer them to paper towels to remove excess oil.
