Ingredients
- 2 large mackerels;
- 800 g potatoes;
- 1 onion;
- 1 carrot;
- 1 bell pepper;
- 3 tablespoons vegetable oil;
- 1 teaspoon dried thyme;
- 1/2 teaspoon ground paprika;
- 1/2 teaspoon ground black pepper;
- 1 teaspoon salt.
Step-by-Step Recipe
- Rinse and pat dry the mackerel with paper towels. Peel and coarsely chop all the vegetables. You can also add any other vegetables to your taste.
- Mix the vegetable oil with thyme, paprika, ground black pepper, and salt. Brush half of this marinade over the mackerel, and mix the other half with the vegetables.
- Transfer the vegetables to an oven-safe dish and bake for 25 minutes in the oven at 190 degrees Celsius (375°F).
- After that, gently stir the vegetables, place the mackerel on top, and bake for another 25-30 minutes until cooked through.
