A good marinade helps make meat more aromatic and enhances its flavor during baking. This is especially important for pork shank, as it cooks for quite a long time and has ample opportunity to absorb all the aromas. Here's an excellent marinade recipe specifically for it!

Ingredients

  • 3 tablespoons soy sauce;
  • 2 tablespoons Dijon mustard;
  • 2 tablespoons vegetable oil;
  • 5-6 cloves garlic;
  • 1 teaspoon smoked paprika;
  • 1 teaspoon dried marjoram;
  • 1 teaspoon ground coriander;
  • 1/2 teaspoon ground black pepper;
  • 1 teaspoon salt.

Step-by-Step Recipe

  1. Peel and press the garlic through a garlic press.
  2. Combine soy sauce, Dijon mustard, and vegetable oil.
  3. Add garlic, smoked paprika, marjoram, ground coriander, salt, and ground black pepper. Mix the marinade thoroughly.
  4. This marinade will be enough for 1.5-2 kg of pork shank. To help the meat absorb the marinade better, make several deep cuts with a knife. Marinate the pork for at least 6 hours in the refrigerator, or preferably overnight.
