Pasta with Shrimp in Tomato-Garlic Sauce – Step-by-Step Recipe

Ingredients
- 300 g pasta;
- 400 g peeled shrimp;
- 300-350 g canned diced tomatoes (or whole peeled tomatoes);
- 1 onion;
- 3 cloves garlic;
- 2 sprigs parsley;
- 2 tablespoons olive oil;
- 1 teaspoon dried oregano;
- 1/2 teaspoon ground red pepper (chili flakes);
- 1/2 teaspoon ground black pepper;
- 1 teaspoon sugar;
- 1 teaspoon salt.
Step-by-Step Recipe
- Cook the pasta according to package directions until al dente, drain, but reserve a few tablespoons of the cooking water just in case.
- Finely chop the onion, mince the garlic and parsley.
- Sauté the onion in olive oil for 3-4 minutes, stirring, then add the garlic and cook for another 30 seconds.
- Add the canned tomatoes and mash them with a spatula. Stir in the sugar, salt, and all spices, mix well, and cook the sauce over low heat for 10-12 minutes.
- Add the shrimp to the pan and cook for another 2-3 minutes. Add the pasta and gently mix. If needed, pour in a little of the reserved pasta water.
- Heat the dish for another 1-2 minutes, remove from heat, and sprinkle with chopped parsley before serving.
