You will need: 1 kg beef shanks, 100 g ginger, 300 g rice noodles, 300 g beef tenderloin, 2 onions, 1 tbsp salt and sugar each, 4 tbsp fish sauce, 1 bunch each of cilantro, mint, and basil, 2 handfuls of bean sprouts, 1 chili pepper, 1 bunch green onions, 1 cinnamon stick, 6 cloves, 5 star anises.
Preparation: Cover the shanks with water and bring to a boil. Roughly chop the onion, chili, and ginger, char them in a dry pan until browned, then add to the broth. Add sugar, salt, fish sauce, cloves, cinnamon, and star anise, and simmer covered over low heat for about 1.5 hours. Remove some of the meat and slice it, then continue to simmer the broth for another 1.5 hours and strain.
Cook the noodles until done, thinly slice the raw tenderloin, and arrange everything in bowls. Add the sliced cooked meat. Pour hot broth over everything. Finely chop all the herbs and sprouts, and serve with the soup.
2. Pho Bo Soup with Chicken

You will need: 1 chicken, 100 g rice noodles, 1 onion, 1 carrot, 2 limes, 1.5 bunches cilantro, 1 handful bean sprouts, 1 chili pepper, 50 g ginger, 3 green onion stalks, 2 lemongrass stalks, 80 g celery root, 2 tbsp soy sauce, 1 star anise.
Preparation: Place the chicken, celery, carrot, and onion in a pot, pour in 2 liters of water, and simmer the broth for about 1 hour, skimming off any foam. Strain it, and remove the meat from the chicken. Add thinly sliced ginger, lemongrass, star anise, soy sauce, garlic, and the juice of half a lime to the broth, and simmer for another 10 minutes.
Strain the broth again. Cook the noodles separately. Roughly chop the chicken, and arrange everything in bowls. Pour hot broth over it and sprinkle the Pho Bo with sprouts, chopped cilantro, chili, lime wedges, and green onions.

Cook the noodles and arrange them in bowls with the salmon. Pour the fish sauce into the broth, then pour it over the noodles and salmon. Add chopped green onions and cilantro, as well as lime wedges and chili to taste.

Pour 2 liters of water over everything, add all the spices, and simmer the broth for about 1.5 hours, then strain.
