In an air fryer, pollock turns out very tender and retains its juiciness, while vegetables become a wonderful addition with minimal effort. This recipe will especially appeal to those who want to diversify their menu with light dishes!

Ingredients

  • 700-800 g pollock fillet;
  • 1 zucchini;
  • 1 bell pepper;
  • 1 onion;
  • 2 tomatoes;
  • 2 tablespoons olive oil;
  • 1 teaspoon lemon juice;
  • 1 teaspoon dried basil;
  • 1/2 teaspoon ground black pepper;
  • 1 teaspoon salt.

Step-by-step recipe

  1. Thaw the pollock fillet if necessary, rinse it, and pat dry with paper towels. Cut the fish into large serving pieces. Roughly chop the zucchini, bell pepper, onion, and tomatoes.
  2. Mix olive oil, lemon juice, dried basil, salt, and ground black pepper. You can also use white pepper or any spices to taste.
  3. Arrange the vegetables in an air fryer basket, then place the pollock pieces on top. Drizzle everything with the marinade and cover with foil.
  4. Cook the dish for about 18-20 minutes in the air fryer at 180 degrees Celsius, then remove the foil and cook for another 5-7 minutes. Be sure to monitor the doneness of the pollock and vegetables, as cooking time may vary depending on your air fryer model.
