When it comes to shashlik, pork neck is often the obvious choice. It has a very successful combination of meat and fat layers. During grilling, these gradually render, so the pieces remain juicy and don't dry out. We're sharing a recipe for the most delicious pork neck shashlik and its marinade!

Servings: 8.

Ingredients

  • 2 kg pork neck;
  • 500 ml sparkling mineral water;
  • 3 onions;
  • 2 tablespoons grainy mustard;
  • 2 tablespoons vegetable oil;
  • 2 teaspoons sweet paprika;
  • 1 teaspoon dried garlic;
  • 1 teaspoon ground coriander;
  • 1 teaspoon ground black pepper;
  • 2 teaspoons salt.

Step-by-step recipe

  1. Wash and pat dry the pork neck with paper towels. Cut the meat into large pieces, about 5 cm in size.
  2. Peel and slice the onions into thick rings. Transfer them to a deep bowl and gently mash with your hands to release their juice.
  3. Add grainy mustard, vegetable oil, sweet paprika, dried garlic, ground coriander, black pepper, and salt to the onions. Pour in the mineral water and mix.
  4. Place the pork into the marinade and mix thoroughly again, ensuring every piece is coated. Cover the bowl with a lid and let the meat marinate for 5 hours in the refrigerator.
  5. After marinating, thread the pork onto skewers, without pressing the pieces too tightly together. Grill the shashlik for 15-18 minutes over well-burnt coals, turning the skewers regularly.
  6. Be sure to let the cooked shashlik rest for 5-7 minutes before serving. Enjoy your meal!
