Source: JackF, AdobeStockFans of hearty homemade dishes have long appreciated the capabilities of the Afghan kazan. In it, pork ribs become especially tender, and the potatoes absorb the meat juices and aroma of spices. All this cooks with minimal supervision, making the process even more convenient. We share a step-by-step recipe that anyone can master!
Preparation time: 1 hour 30 minutes.
Servings: 6.

- 1 kg pork ribs;
- 800 g potatoes;
- 2 onions;
- 2 carrots;

- 2 tablespoons tomato sauce;
- 150 ml water;
- 1 teaspoon smoked paprika;
- 1 teaspoon dried thyme;
- 1 teaspoon salt;
- 1/2 teaspoon ground black pepper;

- Wash and pat dry the ribs with paper towels, then cut them into serving pieces. Peel and cut the potatoes into large wedges, the onions into half-rings, and the carrots into rounds.
- Fry the pork ribs for about 8 minutes directly in the Afghan kazan with vegetable oil. Add the onions and carrots, then cook the vegetables for another 4-5 minutes.
- Add the chopped garlic along with the tomato sauce, paprika, thyme, salt, and ground black pepper. Add the potatoes, pour in the water, and gently mix the ingredients.
- Close the Afghan kazan with the lid, heat until pressure builds up, and cook the dish for approximately 45 minutes. Open the kazan carefully, releasing the steam first!
