Not every cut of meat is equally suitable for grilling over coals, but with the right approach, even leaner pork tenderloin can make amazing shashlik. The main thing here is not to overcook the meat and remove it from the grill in time. We're sharing a great, proven recipe!

Ingredients

  • 1.2 kg pork tenderloin;
  • 2 onions;
  • 3 cloves garlic;
  • 3 tablespoons vegetable oil;
  • 2 tablespoons soy sauce;
  • 1 teaspoon sweet paprika;
  • 1 teaspoon ground coriander;
  • 1/2 teaspoon ground black pepper;
  • 1 teaspoon salt.

Step-by-step recipe

  1. Wash and pat dry the pork tenderloin with paper towels. Cut the meat into large, uniform pieces, about 4-5 cm in size.
  2. Peel the onions and slice them into half-rings. Press the garlic through a press. Mix the onions, garlic, vegetable oil, soy sauce, salt, paprika, coriander, and ground black pepper.
  3. Add the pork to the marinade and mix thoroughly, gently squeezing the onions with your hands. Cover the bowl and refrigerate to marinate for 3-4 hours.
  4. After marinating, thread the pork pieces onto skewers, leaving small gaps between them.
  5. Grill the shashlik for approximately 12-15 minutes over well-burned coals, turning the skewers regularly. Let the cooked shashlik rest for 5 minutes before serving.
