Baking meat and a side dish simultaneously saves time and allows you to prepare a complete lunch or dinner without much hassle. During cooking, the ingredients exchange aromas and juices, resulting in a richer flavor. Pork tenderloin baked with potatoes in the oven is a winning option. We're sharing a great recipe!

Servings: 6.

Ingredients

  • 800 g pork tenderloin;
  • 800 g potatoes;
  • 2 onions;
  • 2 carrots;
  • 4 cloves garlic;
  • 3 tablespoons vegetable oil;
  • 1 teaspoon sweet paprika;
  • 1 teaspoon dried thyme;
  • 1/2 teaspoon ground black pepper;
  • 1.5 teaspoons salt.

Step-by-step recipe

  1. Wash and gently pat dry the pork tenderloin with paper towels. Cut the meat into large pieces. Peel the potatoes and cut the tubers into 4-6 pieces. Slice the carrots into rounds, and the onions into large half-rings.
  2. Press the garlic through a press. Mix it with vegetable oil, salt, paprika, thyme, and ground black pepper.
  3. Place the pork and vegetables in a large bowl. Pour the prepared marinade over them and mix thoroughly so that the spices evenly coat all ingredients.
  4. After that, transfer everything to a baking dish or a roasting bag. If using a dish, cover it with foil or a lid.
  5. Bake the dish for 1 hour in an oven preheated to 180 degrees Celsius (350°F). Then remove the foil or cut open the bag and bake the pork with potatoes for another 20-25 minutes until golden brown.
