Traditionally, ratatouille includes eggplants, zucchini, tomatoes, and bell peppers, but there are also more interesting variations. We've gathered 10 ratatouille recipes for you that we definitely recommend trying!

1. Classic Ratatouille

A delicious dish that whets the appetite with just its appearance.

You will need: 600 g tomatoes, 300 g zucchini, 300 g eggplant, 300 g bell pepper, 1 onion, 7 tbsp olive oil, 2 cloves garlic, salt, ground black pepper, Herbes de Provence.

Preparation: Slice the eggplant, zucchini, and half of the tomatoes into thin rounds. Peel and finely chop the remaining tomatoes. Roast the bell pepper in a baking bag for about 20-25 minutes at 220 degrees Celsius until charred, then peel and finely chop it.

Mince and sauté the onion until golden in 2 tablespoons of oil. Add the chopped tomatoes, simmer for 8-10 minutes, then add the bell pepper and spices. Simmer the sauce for another 5 minutes. Mix the remaining oil with minced garlic, spices, and herbs.

Pour the sauce into a baking dish and arrange the vegetable rounds, alternating them. Drizzle with oil, cover with foil, and bake the ratatouille in the oven for about 1 hour at 180 degrees Celsius. Then remove the foil and bake the vegetables for another 20 minutes.

A simple and accessible ratatouille recipe if you don't want to heat up the oven.

You will need: 1 zucchini, 1 eggplant, 1 bell pepper, 1 onion, 4 tomatoes, 1 tbsp tomato paste, 4 tbsp olive oil, salt, sugar, spices, Herbes de Provence.

Preparation: Peel and finely chop 2 tomatoes, mince the onion and bell pepper. Heat the multicooker with a tablespoon of oil, add the onion and fry for a few minutes. Add the bell pepper, and after a couple more minutes, the tomatoes. Cook the sauce for 10-15 minutes on the frying mode.

Slice the remaining vegetables into thin rounds. Add tomato paste and all spices to the sauce, mix, heat for 1 minute, and set aside half.
