Ingredients
- 2 eggplants;
- 200 g cherry tomatoes;
- 150 g cream cheese;
- 50 g salad mix;
- 2-3 green onion stalks;
- 3 tablespoons cornstarch;
- 3 tablespoons teriyaki sauce;
- 1 teaspoon sesame seeds;
- vegetable oil for frying.
Step-by-step recipe
- Wash and cut the eggplants into large sticks, salt them, and leave for 15 minutes. Then wash them again and thoroughly pat dry with paper towels.
- Dredge the eggplants in cornstarch and fry for 8-10 minutes in a preheated pan with vegetable oil until crispy. Transfer to paper towels to remove excess oil.
- Mix the warm fried eggplants with teriyaki sauce and let them soak for 2-3 minutes.
- Arrange the salad mix, halved cherry tomatoes, fried eggplants, and cream cheese on a plate. Sprinkle the salad with sesame seeds and chopped green onions before serving.
