Ingredients
- 2 eggplants;
- 2 tomatoes;
- 1 bell pepper;
- 1 red onion;
- 3 tablespoons cornstarch;
- 2 tablespoons soy sauce;
- 1 tablespoon honey;
- 1 tablespoon rice vinegar;
- 2 cloves garlic;
- 2 tablespoons chopped cilantro;
- 1 tablespoon sesame seeds;
- vegetable oil for frying.
Step-by-step recipe
- Wash the eggplants and cut them into large sticks. Cut the tomatoes into large wedges, the bell pepper into strips, and the onion into thin half-rings.
- Dredge the eggplants in cornstarch and fry for 8-10 minutes in a preheated pan with vegetable oil until golden brown.
- Press the garlic through a press and mix it with soy sauce, honey, and rice vinegar. Pour the prepared sauce over the eggplants and gently mix.
- Combine the fried eggplants with tomatoes, bell pepper, and onion. Sprinkle the salad with chopped cilantro and sesame seeds before serving. Enjoy your meal!
