1. Potato Shangi

Classic homemade shanezhki – golden brown and very delicious.

You will need:
For the dough: 600 g flour, 200 ml milk, 100 g butter, 2 tbsp sugar, 2 eggs, 10 g active dry yeast.
For the filling: 5 potatoes, 50 g butter, 1 tbsp sour cream, spices.

Instructions: Dissolve the yeast in 100 ml of warm milk and let it sit for 15 minutes. Whisk the eggs with sugar and the remaining milk, then add the activated yeast mixture. Sift the flour and pour in the eggs and melted butter. Knead and leave the dough in a warm place for 1-2 hours.

Boil the potatoes until tender, mash them into a puree, and mix with the other filling ingredients. Divide the dough into approximately 12 pieces, form round flatbreads, and make a small indentation in each with the bottom of a glass. Spoon in the filling and leave the shanezhki in a warm place for half an hour. If desired, brush them with beaten egg, then bake for 20 minutes in the oven at 180 degrees Celsius.

2. Cottage Cheese Shangi

Sweet shangi are perfect for a cozy homemade tea party.

You will need:
For the dough: 100 ml water, 5 g active dry yeast, 2 tbsp sugar, 1-1.5 cups flour, 0.5 tsp salt, 1 egg, 1 tbsp vegetable oil, 45 g butter.
For the filling: 150 g cottage cheese, 2 tsp sugar, 1 tsp sour cream.

Instructions: Dissolve the yeast, a spoon of sugar, and a spoon of flour in warm water. Leave this mixture in a warm place for 15 minutes, then add the egg, salt, both types of oil, and mix. Incorporate the flour and leave the dough in a warm place for 1.5 hours.

Mix all the filling ingredients together. Divide the dough into pieces, form flatbreads with an indentation, and place the cottage cheese in each. Leave the shangi in a warm place for another 15 minutes, brush with egg yolk if desired, and bake for 25 minutes in the oven at 180 degrees Celsius.

3. Cheese Shangi

You will need:

You will need:
For the dough: 4 cups flour, 2 tbsp vegetable oil, 2 tbsp sugar, 500 ml water, 10 g active dry yeast, 1 tsp salt.
