Ingredients
- 8 sheets rice paper;
- 250 g peeled shrimp;
- 150 g cream cheese;
- 1 avocado;
- 1 long cucumber;
- 80 g salad mix;
- 2 tablespoons chopped green onions;
- vegetable oil for frying.
Step-by-Step Recipe
- Sauté the shrimp for 2 minutes in a preheated pan with a little vegetable oil, then let them cool completely.
- Peel and slice the avocado thinly, and cut the cucumber into long julienne strips.
- Dip each rice paper sheet in warm water for 10-15 seconds.
- Arrange salad mix, cream cheese, fried shrimp, avocado, cucumber, and green onions on one edge of the rice paper.
- Fold in the side edges and roll into tight spring rolls. Serve with soy or peanut sauce.
