Ingredients

  • 8 sheets rice paper;
  • 250 g peeled shrimp;
  • 150 g cream cheese;
  • 1 avocado;
  • 1 long cucumber;
  • 80 g salad mix;
  • 2 tablespoons chopped green onions;
  • vegetable oil for frying.

Step-by-Step Recipe

  1. Sauté the shrimp for 2 minutes in a preheated pan with a little vegetable oil, then let them cool completely.
  2. Peel and slice the avocado thinly, and cut the cucumber into long julienne strips.
  3. Dip each rice paper sheet in warm water for 10-15 seconds.
  4. Arrange salad mix, cream cheese, fried shrimp, avocado, cucumber, and green onions on one edge of the rice paper.
  5. Fold in the side edges and roll into tight spring rolls. Serve with soy or peanut sauce.
