Shurpa with Beef and Vegetables in an Afghan Kazan

An Afghan kazan allows you to achieve an especially aromatic and rich broth in less time than traditional cooking. We share a simple step-by-step recipe!

Ingredients
- 900 g beef;
- 700 g potatoes;
- 2 onions;
- 2 carrots;
- 2 bell peppers;
- 3 tomatoes;
- 1 chili pepper;
- 4 cloves garlic;
- 1.8 l water;
- 2 bay leaves;
- 1 teaspoon ground coriander;
- 1 teaspoon sweet paprika;
- 1 teaspoon salt;
- 1/2 teaspoon ground black pepper;
- 3 tablespoons chopped cilantro.
Step-by-step recipe
- Wash, pat dry with paper towels, and cut the beef into large pieces. Similarly, cut the vegetables into large pieces, peel the garlic cloves, and leave the chili whole or cut it in half to remove the seeds.
- Load the beef, all prepared ingredients, bay leaf, salt, and spices into the Afghan kazan. Pour in water and stir gently.
- Close the Afghan kazan with the lid, bring to a boil, reduce the heat slightly, and cook the shurpa for 50 minutes after it reaches working pressure.
- After the pressure is released, carefully open the kazan, sprinkle the shurpa with chopped cilantro, and let it steep for 10 minutes before serving.
