Sometimes you crave something homemade, like grandma used to make, or at least like in a school cafeteria – and that's where sochniki are just perfect. Here's a collection of recipes with soft dough, moist filling, and an amazing balance of flavors. Everything is prepared without much hassle and from the most accessible ingredients, and the result will delight the whole family!

1. Classic Sochniki with Cottage Cheese

You can also add a handful of raisins, dried apricots, or prunes to the filling.

You will need:
For the dough: 80 g butter, 100 g sour cream, 1 egg, 80 g sugar, 300 g flour, 1 tsp baking powder, vanilla sugar, salt.
For the filling: 400 g cottage cheese, 1 egg, 30 g sugar, vanilla sugar.

Preparation: Mix soft butter, sour cream, egg, sugar, and salt, then stir in the flour with baking powder. Knead the resulting dough and refrigerate for half an hour. For the filling, separately whisk cottage cheese, both types of sugar, and egg white.

Roll out the dough to about 5 mm thick and cut into circles. Place a spoonful of filling on each, fold in half, press lightly, and brush with the remaining yolk. Bake the sochniki for 25-30 minutes in the oven at 180 degrees Celsius.

You will need:

For the filling: 250 g cottage cheese, 1 egg, 30-50 g sour cream, 2 tsp sugar, vanilla.

Preparation: Mix the egg with sugar, kefir, and soft butter. Add flour with baking powder, quickly knead the dough, and refrigerate for 20 minutes. Separately mix cottage cheese, egg white, sugar, sour cream, and vanilla to taste for the filling.

Roll out the dough to 5-7 mm thick and cut into circles. Place the filling on each, fold in half, press lightly, and brush the sochniki with yolk. Bake for 25-30 minutes in the oven at 190 degrees Celsius.

Fold in half, press lightly, and brush the sochniki with yolk. Bake for 25-30 minutes in the oven at 180 degrees Celsius.

Drain the ricotta in cheesecloth to remove excess liquid. Then mix the cheese with egg white and the remaining ingredients, and set aside the yolk.
