Every hostess has her own solyanka recipe, and that's what makes it so interesting. Solyanka with sausage and no potatoes turns out rich, aromatic, and with that pleasant tanginess that many love this soup for. It's made from readily available ingredients and is perfect for warming you up on a cool day! We're sharing a great recipe!

Ingredients

  • 250 g boiled sausage;
  • 200 g smoked sausage;
  • 150 g smoked chicken fillet;
  • 2.2 liters of water;
  • 3 pickled cucumbers;
  • 1 onion;
  • 2 tablespoons tomato paste;
  • 12 pitted black olives or green olives;
  • 1 tablespoon lemon juice;
  • 2 bay leaves;
  • 1/2 teaspoon ground black pepper;
  • salt to taste;
  • vegetable oil for frying.

Step-by-Step Recipe

  1. Cut both types of sausage, smoked chicken, and pickled cucumbers into strips. Peel and finely chop the onion.
  2. Sauté the onion for 4-5 minutes in a heated pan with vegetable oil, add the tomato paste, and cook for another 1 minute.
  3. Transfer the sausage, smoked chicken, cucumbers, and onion with tomato paste to a pot, pour in water, and bring to a boil.
  4. Add bay leaves, black or green olives, lemon juice, ground black pepper, and salt. Cook the solyanka for about 15 minutes over medium heat.
  5. Be sure to let the soup steep for about 10 minutes under the lid before serving. Serve the finished solyanka with a lemon slice, sour cream, and fresh herbs.
