Stuffed Eggplant with Minced Meat in an Air Fryer

Ingredients
- 2 large eggplants;
- 500 g mixed ground meat;
- 1 onion;
- 2 tomatoes;
- 120 g hard cheese;
- 2 cloves garlic;
- 2 tablespoons tomato sauce;
- 1 teaspoon dried oregano;
- 1/2 teaspoon ground black pepper;
- 1 teaspoon salt;
- vegetable oil for frying.
Step-by-Step Recipe
- Wash the eggplants and cut them in half lengthwise. Carefully scoop out some of the flesh with a spoon, leaving walls about 1 cm thick. Finely chop the scooped-out flesh.
- Finely grate the onion, press the garlic through a press, and dice the tomatoes into small cubes.
- Sauté the ground meat for 5-6 minutes in a pan, stirring, then add the onion, garlic, eggplant flesh, tomatoes, tomato sauce, oregano, ground black pepper, and salt. Cook the filling for another 6-7 minutes, stirring.
- Fill the eggplant halves with the prepared filling and sprinkle with grated cheese.
- Transfer the stuffed eggplants to the air fryer basket and bake for approximately 18-20 minutes at 180 degrees Celsius (350°F).
