Ingredients

  • 4 trout steaks;
  • 800 g potatoes;
  • 1 bell pepper;
  • 1 zucchini;
  • 1 red onion;
  • 150 g cherry tomatoes;
  • 3 tablespoons olive oil;
  • 1 teaspoon dried rosemary;
  • 1/2 teaspoon ground paprika;
  • 1/2 teaspoon ground black pepper;
  • 1 teaspoon salt.

Step-by-Step Recipe

  1. Wash and coarsely chop all vegetables, leave cherry tomatoes whole.
  2. Mix olive oil with rosemary, paprika, ground black pepper, and salt. Brush the trout with one-third of this aromatic marinade, and toss the vegetables with the remaining portion.
  3. Arrange potatoes, onion, bell pepper, and zucchini in a baking dish and cook for 20 minutes in the oven at 190 degrees Celsius (375°F).
  4. After that, remove the dish, add cherry tomatoes, and arrange the trout steaks on top.
  5. Return the dish to the oven for another 18-20 minutes, until the fish is fully cooked and the potatoes are tender.
