You will need: 2 trout, 8 potatoes, 4 sprigs of rosemary, 4 tbsp olive oil, 4 cloves garlic, 2 egg yolks, 2 tbsp mustard, 2 tbsp butter, 2 tbsp lemon juice, salt, ground black pepper.
Preparation: Rinse, clean, and gut the trout. Mix olive oil, minced garlic, salt, and black pepper, rub this marinade inside and outside the fish, and let it sit for 20 minutes. In the meantime, slice the potatoes into medium rounds.
Separately, mix melted butter, lemon juice, mustard, egg yolks, and a little more salt and pepper. Place the potatoes in a baking dish, add the trout on top, and pour the prepared sauce over everything. Add the rosemary sprigs and bake for 20 minutes in the oven at 200 degrees Celsius.

You will need: 2-3 trout steaks, 5 potatoes, 80 g hard cheese, 3 tbsp mayonnaise, salt, spices.
Preparation: Season the trout steaks with salt and spices, then peel and slice the potatoes. Mix grated cheese with mayonnaise, set aside a small amount of this sauce, and mix the rest with the potatoes.
Spread the potatoes in a baking dish, add the trout steaks on top, and coat everything with the remaining cheese and mayonnaise sauce. Bake for 30-35 minutes in the oven at 180 degrees Celsius.

3. Baked Trout with Potatoes in Cream

You will need: 600 g trout, 700 g potatoes, 300 ml heavy cream, 1 lemon, 3 sprigs of rosemary, 6 tbsp olive oil, salt, paprika, dried garlic, ground black pepper.
Preparation: Slice half of the lemon, and squeeze the juice from the other half. Mix a tablespoon of lemon juice, olive oil, and all the spices. Cut the trout into steaks or simply into portioned pieces, coat them with this marinade, and let sit for 20 minutes.
Slice the potatoes thinly and parboil them for 2 minutes in boiling water. Arrange the potatoes and trout in a heatproof dish, add rosemary and lemon slices, and bake for approximately 20-25 minutes in the oven at 180 degrees Celsius.

4. Trout with Potatoes au Gratin in the Oven

You will need: 400 g trout, 6 potatoes, 1 carrot, 1 onion, 200 ml cream, 1 tbsp flour, 50 g butter, 2 cloves garlic, olive oil, salt, spices.
Preparation: Peel and thinly slice the potatoes, mix them with olive oil and spices, then spread them in a heatproof dish and add pieces of trout on top. Mince and sauté the onion with carrots, then spread this sautéed mixture over the trout.
