Vegetable Stew with Chicken in an Air Fryer – Step-by-Step Recipe

We share a simple recipe for vegetable stew with chicken fillet in an air fryer. This is a great everyday dish to feed the whole family a hearty and healthy meal!

Ingredients
- 2 chicken fillets;
- 2 tomatoes;
- 2 zucchini;
- 1 eggplant;
- 1 bell pepper;
- 1 onion;
- 2 cloves garlic;
- 2 tablespoons olive oil;
- 1 teaspoon sweet paprika;
- 1 teaspoon dried oregano;
- 1/2 teaspoon ground black pepper;
- 1 teaspoon salt.
Step-by-Step Recipe
- Rinse and pat dry the chicken fillets with paper towels. Wash and coarsely chop the vegetables, and coarsely chop the chicken in the same way. You can also add any other vegetables to taste.
- Finely chop the garlic and mix it with olive oil, salt, and all the spices.
- Thoroughly mix the chicken with the vegetables and this aromatic mixture so that the oil and spices are evenly distributed.
- Place everything in a baking dish and cook the vegetable stew with chicken for approximately 22-25 minutes in the air fryer at 190 degrees Celsius (375°F). Gently stir it once during the process.
