Have you ever tried baking bread yourself? How about yeast-free buckwheat bread in the oven? It boasts a rich flavor, dense texture, and doesn't require lengthy dough preparation. It's perfect for sandwiches or as an accompaniment to main dishes. We're sharing a tried-and-true recipe!

Preparation time: 1 hour 30 minutes.
Servings: 1.

Ingredients

  • 1.5 cups green buckwheat;
  • 3 tablespoons chia seeds;
  • 3 tablespoons olive oil;
  • 1.5 teaspoons apple cider vinegar;
  • 1.5 teaspoons baking soda;
  • 3-5 tablespoons seeds, nuts, dried fruits, and other additions to taste;
  • salt.

Step-by-step recipe

  1. Rinse the green buckwheat and soak it in cold water for at least 3 hours.
  2. After soaking, drain it in a colander, rinse again, and let it drain slightly.
  3. While the buckwheat is draining, soak the chia seeds in 6 tablespoons of water for 10 minutes.
  4. Blend the buckwheat, but not until completely smooth. Let some texture remain.
  5. Add the chia seeds, salt, baking soda, apple cider vinegar, and olive oil, then mix again. Additionally, fold in any desired additions to taste.
  6. Transfer the dough to a baking pan and bake the buckwheat bread for about 1 hour in the oven at 200 degrees Celsius (390°F). The baking time may vary slightly depending on your oven.
  7. Remove the bread from the pan, let it cool, and only then slice it.
