Zucchini and Minced Meat Casserole in an Air Fryer – Easy Recipe

Ingredients
- 2 medium zucchinis;
- 500 g pork and beef minced meat;
- 1 onion;
- 2 chicken eggs;
- 150 g hard cheese;
- 150 g sour cream, 20% fat;
- 2 cloves garlic;
- 1 teaspoon dried oregano;
- 1/2 teaspoon ground black pepper;
- 1 teaspoon salt;
- vegetable oil for frying.
Step-by-Step Recipe
- Wash and grate the zucchinis on a coarse grater. Salt them, leave for 10 minutes, then squeeze out the excess liquid thoroughly.
- Finely chop the onion, press the garlic through a press, and grate the cheese.
- Fry the pork and beef minced meat for 5-6 minutes in a preheated pan with vegetable oil, breaking up any clumps with a spatula. Add the onion and garlic to the pan, sprinkle in the dried oregano, and cook for another 3-4 minutes.
- Separately whisk the eggs with sour cream, ground black pepper, and salt. Add the grated zucchini, half of the grated cheese, and mix.
- Place half of the zucchini mixture into a heatproof dish, spread the minced meat on top, and cover with the remaining zucchini mixture. Sprinkle with the remaining cheese.
- Cook the casserole for approximately 30-35 minutes in an air fryer at 180 degrees Celsius (350°F). Let it rest for another 10 minutes before slicing. Enjoy your meal!
