Shchi is a quintessential Russian dish, without which Russian cuisine is unimaginable. Once, this term referred to various stews, but now it primarily means a cabbage-based soup. Shchi always turns out hearty and delicious, especially with these recipes!

1. Shchi with Fresh Cabbage

A quick recipe for when you don't want to spend a lot of time cooking.

You will need: 400 g chicken, 6 potatoes, 300 g cabbage, 1 carrot, 2 onions, 6 tomatoes, 5 cloves of garlic, spices.

Preparation: Boil the chicken until cooked, strain the broth, and add diced potatoes. When they are half-cooked, add shredded cabbage.

Prepare a sauté of carrots, onions, and garlic, and add it to the shchi. Separately, chop and fry the tomatoes for 4-5 minutes, then also add them to the pot. Cook the shchi for another 10 minutes and season to taste.

You will need: 500 g beef on the bone, 500 g sauerkraut, 2 carrots, 4 potatoes, 1 celery root, 2 onions, 3 cloves of garlic, 2 tbsp tomato paste, 1 tbsp flour, 3 tbsp butter, spices and herbs.

Preparation: Boil broth from beef, 1 peeled onion, 1 carrot, and celery root. This takes about an hour and a half. Strain it. Squeeze the sauerkraut and fry it in a tablespoon of butter with a tablespoon of tomato paste. Season and simmer for half an hour.

In another tablespoon of butter, fry grated carrots and chopped onions until golden. Season, add the remaining tomato, and simmer for about 5 minutes. In the last tablespoon of butter, fry the flour until golden. Dice the potatoes.

Add the potatoes to the boiling broth, and after 10 minutes, add all other ingredients. Bring the shchi to a boil and cook for another 6-7 minutes. At the very end, add chopped herbs and spices.
