The most accessible recipe with sugar and water – without any unnecessary additives.

You will need: 5 kg white currants, 2 kg sugar, 5 liters water.

Preparation: Sort the currants, but do not wash them. Mash them with your hands or a rolling pin. Mix warm water and 1 kg of sugar. Pour the berries into a jar or similar container, pour in the syrup, mix, tie gauze around the neck, and leave for 3-4 days in a dark place at room temperature. Stir daily.

Strain the mixture through cheesecloth and transfer to a fermentation vessel. Cover with an airlock lid or put on a rubber glove with a punctured finger. Leave the wine to ferment at room temperature for 3-6 weeks.

After 5 days, drain 500 ml of the mixture, mix with 500 g of sugar, and pour back in. Repeat this procedure after another 5 days. Strain the wine from the sediment, pour into a clean container, close again with a glove, and send it to the cellar or refrigerator for another couple of months, then bottle for storage.

2. White Currant Wine with Dry Yeast

A convenient option that doesn't require preparing a separate starter.

You will need: 6 cups white currants, 3 cups sugar, 3 tsp dry yeast, 5-6 liters water.

Preparation: Sort the white currants, remove the stems, lightly mash them, and divide into three 3-liter jars. Add one cup of sugar and one spoon of yeast to each. Pour warm water up to the shoulders of the jars and put rubber gloves with a punctured finger on them.

Leave the mixture in a dark place at room temperature for 30-45 days, then strain the wine from the sediment using a tube. Strain it again through cheesecloth, bottle it, and store in a cool, dark place.

Preparation: Lightly mash the currants, add half the water and sugar. Let it ferment for a couple of days in a warm place. Drain the liquid, then pour water over the remaining berries again and leave for another 2 days. Drain this liquid again and mix with the previous batch.

Pour the mixture into a fermentation vessel and attach an airlock. Leave the wine in a dark place for about a month, then carefully filter it without disturbing the sediment. Bottle it and age the wine for at least another month.

6. White Currant Wine with Raspberry Starter

You will need: 3 kg white currants, 2 kg sugar, 3 liters water, 1 cup raspberries, 1/2 cup rose hips, another 1/2 cup sugar.

Preparation: Mash unwashed raspberries and rose hips, add half a cup of sugar, and pour water over them until covered. Tie gauze around the jar and leave for 3 days in a warm place, stirring occasionally.

Boil a syrup from water and 2 kg of sugar and let it cool. Grind the white currants using any convenient method. Mix them with the syrup and the starter, tie everything with gauze, and let it ferment. Stir the must 4-5 times a day, and after 7-8 days, strain the mixture through several layers of cheesecloth.

Pour the juice into jars and seal with an airlock. Let the wine ferment for about 40 days, shaking it periodically. Filter it using a tube, bottle it, seal, and send it to mature for another 2 months in a cool place.

Squeeze the mixture through cheesecloth, pour this juice into a clean jar, and attach an airlock. Leave everything for 30 days until fermentation stops and the wine becomes clear. Filter it and bottle for storage.
