If you have leftover pork rinds, don't rush to throw them away. You can make something interesting out of them! In particular, they make excellent appetizers – practically delicacies. We've already gathered several such recipes for you in this collection!

This results in something like a roll, which then needs to be thinly sliced.

You will need: 1 kg pork rinds, 150 ml soy sauce, 1 tsp salt and sugar each, 1 star anise, 1 tsp peppercorns.

Preparation: Wash and scrape the pork rinds with a knife. Place them in a pot, cover with water, add soy sauce and all spices. Bring to a boil and simmer for 1 hour over low heat. Line a roll mold with cling film.

Arrange the hot rinds directly on top of each other. You can sprinkle layers with spices to taste. Place a press weighing 2-3 kg on top and leave the preparation in the cold for 8-12 hours. After that, remove the weight and film, and slice the appetizer.

2. Spicy Pan-Fried Pork Rinds

A piquant Asian appetizer in a tomato marinade.

You will need: 400 g pork rinds, 4 green onion stalks, 150 g onion, 4 cloves garlic, 50 ml vegetable oil, 1/3 tbsp salt, 1 tsp ground black and red pepper each, 2 tbsp soy sauce, 0.5 tbsp sugar and tomato paste each.

Preparation: Boil the rinds for about 1.5 hours over low heat until tender, then cut into small pieces. Slice the onion into feathers, mince the garlic and green onion. Sauté the regular onion in oil until translucent.

Add tomato paste, 50 ml water, all spices, and pork rinds. Simmer for a couple of minutes until the water evaporates, pour in soy sauce, add garlic with green onion, and mix. Remove from heat.

3. Crispy Pork Rind Cracklings

You will need: 450 g pork rinds, 1 onion, 1 chili pepper, 1 tbsp peppercorns, 1 tbsp coriander, 2 cloves garlic, 2 tsp smoked paprika, 1 tbsp salt.

Preparation: Cut the rind into pieces and place it in a pot with water. Add coriander, garlic, peppercorns, onion halves, and chili. Boil everything together for 1 hour over low heat, then cut the rinds into smaller pieces and spread them on parchment paper. Scrape off as much meat and fat as possible with a knife.

Then, send the pork rinds to the oven for 2.5 hours at 150 degrees Celsius, flipping them once halfway through the cooking process. Let the preparations cool slightly and deep-fry everything in plenty of oil – in batches for about 30 seconds each. Place on paper towels and sprinkle the cracklings with salt and smoked paprika.

A Spanish snack, essentially another variation of crispy cracklings.

You will need: 700 g pork rind, 2 tsp ground cumin and ancho pepper each, 1 tsp salt, peanut oil for deep frying.

Preparation: Boil the pork rind over low heat until tender, about 2 hours. Spread it in an even layer on a rack and refrigerate for 2 hours. Carefully remove the fat and dry the rind for about 8 hours in the oven at the lowest temperature or at 80 degrees Celsius.

Break the rind into pieces and deep-fry in peanut oil in batches for about 15-20 minutes. Place everything on paper towels and sprinkle with a mixture of salt and spices.

5. Fried Pork Rinds

Preparation: Cut the rinds into strips, boil them for 40-60 minutes over low heat, and drain. Transfer everything to a bowl and add the remaining ingredients. Let the pork rinds marinate in this mixture for 8-12 hours.

You will need: 500 g pork liver, 500 g pork rinds, 250 g onion, 50 g lard, 250 g bell pepper, 5 cloves garlic, 2 tbsp semolina, spices.

Preparation: Dice the lard and sauté the chopped onion and bell pepper in it. Boil the pork rinds until tender, about 1.5 hours. Let everything cool and blend with garlic and liver until smooth. Add spices and semolina, mix, and transfer the mixture to baking molds.

Bake the terrine for 1.5 hours in the oven at 120-130 degrees Celsius. Then turn off the heat and leave the dish in the oven for another half hour. Let it cool directly in the molds, wrap in cling film, refrigerate for 12 hours, and only then remove from the molds and slice.

Preparation: Roughly chop the onion, sauté for a couple of minutes, add the chopped tomato and fry for another 3-4 minutes. Add tomato paste and a glass of water, bring to a boil, and add all spices. Place the pork rind, rolled into a ring, into this sauce and simmer for 1-1.5 hours over low heat.
