1. Shrimp Pad Thai

You will need: 200g peeled shrimp, 1 egg, 250g rice noodles, 50g brown sugar, 3 tbsp fish sauce, 3 tbsp tamarind paste, 3 cloves garlic, 1 shallot, 0.5 tsp ground red pepper, 30g bean sprouts, 1 bunch green onions, 1 tbsp peanuts, lime, vegetable oil.
Instructions: Soak the noodles in hot water until pliable, about 10-15 minutes. Heat the fish sauce, tamarind, and sugar until dissolved. Toast the chopped peanuts in a dry pan. Mince the onion and garlic, sauté them for a couple of minutes in oil, then add the shrimp.
Sauté until cooked through, add the rice noodles, pour in the sauce, and mix. Crack in the egg and mix everything again. When the noodles are soft enough, add the pepper, chopped green onions, sprouts, mix again, and remove the Pad Thai from heat. Sprinkle with peanuts and squeeze lime juice over it.
2. Veal Pad Thai

You will need: 50g rice noodles, 70g brown sugar, 40g tamarind paste, 40ml fish sauce, 20ml chili sauce, 30g shallots, 10g green onions, 50g veal, 20ml vegetable oil, 1 egg, 50g mung bean sprouts.
Instructions: Soak the noodles in warm water. Heat the fish sauce, chili, tamarind, and sugar over low heat until smooth. Mince and sauté the onion in oil until fragrant. Add thinly sliced veal and chopped carrots, and cook until the meat is lightly browned.
Push everything to one side and pour in the beaten egg. Once the egg omelet is slightly set, mix it with the meat. Add the sauce, noodles, and mix everything again. After half a minute, add the sprouts and chopped green onions, mix, and cook for another 5 minutes.

3. Chicken Pad Thai

You will need: 170g rice noodles, 30ml fish sauce, 30g brown sugar, 45g tamarind paste, 4 cloves garlic, 120g red onion, 300g chicken fillet, 2 eggs, 15g green onions, 200g soy sprouts, 120g roasted peanuts.
Instructions: Soak the rice noodles in warm water. Mix the fish sauce, sugar, tamarind, and 2 cloves of garlic. Sauté thinly sliced chicken for 3-4 minutes over high heat and set aside. Separately sauté finely chopped onion, add the remaining garlic, and after half a minute, add the noodles, chicken, and sauce.

When the eggs are set, mix them with the noodles and add chopped green onions, sprouts, and crushed peanuts. Cook the Pad Thai for another 1 minute, stirring.
4. Tofu Pad Thai

You will need: 220g rice noodles, 100g tofu, 1-2 chili peppers, 2 cloves garlic, 100g bean sprouts, 100g green onions, 50g roasted peanuts, 1.5 tsp tamarind paste, 2 tsp fish sauce, 50ml soy sauce, 3 tbsp brown sugar, 2 tbsp lime juice, 1.5 tsp garlic sauce or chili sauce.
Instructions: Mix all sauces, sugar, paste, and lime juice until smooth. Pour warm water over the noodles to make them more pliable. Sauté the tofu in oil for about 4 minutes, stirring. Add minced chili and garlic, and fry a little longer. Add the noodles, sauce, chopped green onions, sprouts, and crushed peanuts. Cook everything together for 2-3 minutes, stirring, until the noodles are soft.

5. Tofu and Peanut Butter Pad Thai

You will need: 100g rice noodles, 150g tofu, 1 carrot, 1/2 red onion, 3 cloves garlic, 2 green onion stalks, 1 tbsp chopped peanuts, 1 tbsp peanut butter, 2 tbsp teriyaki sauce, 2-3 tbsp water, lime, hot red pepper.
Instructions: Pour hot water over the rice noodles until soft. Slice the tofu into planks and fry on both sides until golden. Separately sauté thinly sliced onion, carrot, and minced garlic until soft.
Mix water, teriyaki, peanut butter, and hot red pepper. Add the sauce, noodles, peanuts, diced tofu, and coarsely chopped green onions to the vegetables in the pan. Cook everything together for another couple of minutes. Serve Pad Thai with a lime wedge.

You will need: 200g rice noodles, 2 tbsp fish sauce, 2 tbsp brown sugar, 4 tbsp tamarind paste, 1 tsp lime juice, 1 tsp rice vinegar, 2 tbsp vegetable oil, 2 cloves garlic, 1/2 cup chopped tofu, 1/2 cup chopped chicken, 1 egg, 150g large peeled shrimp, 1 tsp paprika, 4 green onion stalks, 2 tbsp chopped roasted peanuts, 1/2 cup bean sprouts.
Instructions: Pour boiling water over the noodles for 5-10 minutes. Mix the fish sauce, tamarind paste, sugar, vinegar, and lime juice until smooth. Lightly sauté minced garlic, add tofu cubes, and fry for another 1 minute. Crack in the egg, add the chicken, mix everything together, and fry for another 2 minutes.
Add the shrimp and continue frying until they turn pink. Add the noodles, mix, and cook for another 2 minutes. Pour in the sauce, mix again, and after 1 minute, add paprika, chopped green onions, sprouts, and peanuts. Mix once more and remove the Pad Thai from heat.
7. Vegetable and Mushroom Pad Thai

8. Pork and Napa Cabbage Pad Thai
