You will need: 800 g radishes, 3 cloves garlic, 1 bunch herbs, 3 tbsp apple cider vinegar, 5 tbsp olive oil, 2-2.5 tsp salt, 3 tsp sugar.
Preparation: Place the radishes in a plastic bag and gently smash them with a kitchen mallet or rolling pin. Mix olive oil, apple cider vinegar, salt, and sugar, finely chop the herbs with garlic, and add everything to the radishes. Mix well and refrigerate the bag for several hours, or even better – for 1 day.
2. Pickled Radishes for Winter

You will need: 600 g radishes, 2 tbsp 6% vinegar, 2 tsp salt, 2 tbsp sugar, 1 tsp peppercorns.
Preparation: Slice and tightly pack the radishes into sterilized jars, add peppercorns, and pour boiling water over them. Leave for 10 minutes, then drain this water into a saucepan. Add sugar, salt, and vinegar to it, bring the resulting marinade to a boil, pour it over the radishes, and seal the jars for winter.

3. Asian-Style Smashed Pickled Radishes

You will need: 800 g radishes, 4 cloves garlic, 4 sprigs cilantro, 2 green onion stalks, 6 tbsp vegetable oil, 2 tbsp rice vinegar, 2 tbsp soy sauce, 1 tsp oyster sauce, 1 tsp sugar, sesame seeds, chili flakes.
Preparation: Lightly smash the radishes with a rolling pin or kitchen mallet. Mince the garlic and all the herbs, mix them with sesame seeds and chili flakes, then pour hot vegetable oil over them and mix. Add rice vinegar, sugar, oyster, and soy sauces. After that, add the radishes to the resulting marinade, mix again, and leave to marinate for at least 30 minutes in the refrigerator.

Preparation: Slice the radishes thinly and arrange them in sterilized jars, alternating layers with garlic and dill. Separately, boil about 750-800 ml of water with bay leaf, allspice, and salt. Pour in the vinegar, pour this marinade into the jars, and seal the radishes for winter.

5. Pickled Radishes with Onions

6. Cold-Method Pickled Radishes

You will need: 500 g radishes, 1 bunch herbs, 4 cloves garlic, 2 tbsp vinegar, 3 tsp sugar, 1.5 tsp salt, 1 tsp peppercorns, 0.5 tsp coriander, 1 tsp mustard seeds, 2 bay leaves, 500 ml water.
Preparation: Boil water with salt, sugar, and all spices, then cool, pour in the vinegar, and mix. Thinly slice the radishes, mince the garlic with herbs, and pour the strained marinade over everything. Close the container and refrigerate the appetizer for 5-8 hours.
