You can adjust the quantity and selection of spices to your liking.

You will need: 1.5 kg pork knuckle, 1 liter dark beer, 1 tsp each of caraway seeds, oregano, and coriander, 1 onion, 1 carrot, 5 cloves garlic, spices, salt, 2 tbsp honey, 2 tbsp soy sauce, 1 tbsp mustard, 1 tsp lemon juice.

Preparation: Clean the knuckle, place it in a pot, add spices, and pour in the beer. Leave it overnight under pressure in the refrigerator. Then bring to a boil, add onion, carrot, and salt. During cooking, add water as needed to keep the knuckle submerged. Simmer for about 2-3 hours over low heat, then let it cool.

Prick the knuckle with a knife and stud it with garlic slices. Mix soy sauce, honey, mustard, and lemon juice, brush the knuckle with this marinade, and bake for 1.5 hours at 150 degrees Celsius. Brush it with the glaze several more times during baking.
