1. Vegetable Rolls with Carrots and Spinach

They turn out fresh, light, and slightly crunchy.

You will need: 2 cups sushi rice, 8 tbsp rice vinegar, 1 cucumber, 1 carrot, 1 avocado, 250 g spinach, 2 eggs, 4 green onion stalks, 4 tbsp sugar, 1 tbsp salt, nori.

Preparation: Rinse and cook the rice according to package instructions. Season it with rice vinegar, sugar, and salt, then let it cool. Separately, blanch the spinach and green onions in boiling water for just 1 minute. Boil and slice the carrot into thin, long strips, and do the same with the cucumber and avocado.

Whisk and fry the eggs, let the omelet cool, and then cut it into strips. Place a nori sheet rough side up, add a layer of rice and spread it evenly. Carefully arrange the omelet and all the vegetable filling along one edge, then roll it up. Prepare the remaining rolls in the same way and slice them with a knife moistened in water.

Preparation: Slice the zucchini into very thin ribbons and spread them with cream cheese. Slice the remaining vegetables into strips and roll all the filling into the zucchini ribbons.
