Today we will share with you a wonderful recipe for Adjarian Khachapuri made from ready-made puff pastry. Try it and appreciate the advantages of this option!

Preparation time: 45 minutes.
Servings: 4.

Ingredients

  • 1 kg puff pastry;
  • 4 chicken eggs;
  • 2 egg yolks;
  • 300 g Suluguni cheese;
  • 300 g cottage cheese (or farmer's cheese);
  • ground black pepper to taste;
  • salt to taste.

Step-by-Step Recipe

  1. Remove the puff pastry from its packaging, unroll it on a table, and let it thaw at room temperature.
  2. Pass the cottage cheese through a sieve or blend it in a blender.
  3. Grate the Suluguni cheese on a fine grater.
  4. Mix together the cottage cheese, Suluguni, ground black pepper, and salt. The filling is ready!
  5. Divide the puff pastry into 4 equal pieces. Roll out each piece to form a large rectangle. Fold up the edges to create high sides.
  6. Place a quarter of the cheese and cottage cheese filling inside each "boat."
  7. Repeat the same process with the remaining pastry pieces.
  8. Carefully transfer the khachapuri to a baking sheet lined with parchment paper, and brush the pastry with egg yolk.
  9. Bake the Adjarian khachapuri for about 10 minutes in an oven preheated to 220 degrees Celsius (425°F).
  10. After that, remove the khachapuri from the oven, make small indentations in the cheese mixture with a spoon, and crack one egg into each. Bake for another 5 minutes at 200 degrees Celsius (400°F).
  11. Adjarian khachapuri made from puff pastry is recommended to be served hot with fresh herbs and vegetables.
