1. Classic Syrniki
The most classic syrniki recipe, to which you can add anything to your taste – dried fruits, candied fruits, or chocolate!
You will need: 500 g cottage cheese, 2 eggs, 6 tbsp flour, 2 tbsp sugar.
Preparation: Mash the cottage cheese with a fork or whisk with a blender to make the syrniki airy. Add eggs, sugar, and mix the dough well. Vary the amount of flour depending on the density you want to achieve – about 5 tbsp. Form cottage cheese balls, roll them in flour, flatten them, and fry them in a pan for just 1-2 minutes on each side.
2. Syrniki with Corn Flour
The dough turns out dense, elastic, but very tender.
You will need: 300 g cottage cheese, 4 tbsp corn flour, 1 egg, 1 tbsp zest, 1 tbsp sugar.
Preparation: Thoroughly rub the dry cottage cheese with egg and sugar until smooth. Add lemon zest, vanilla, cinnamon, or almond extract to taste. Mix the flour into the dough and knead, form elastic patties, roll them in a little more flour, and you can fry them.
3. Syrniki with Semolina
Semolina is much healthier than regular flour and makes an excellent substitute.
You will need: 400 g cottage cheese, 5 tbsp semolina, 3 tbsp sugar, 2 eggs, 0.5 tsp baking soda, a pinch of salt.
Preparation: Combine cottage cheese, 4 tbsp semolina, sugar, salt, and eggs in one bowl and let it sit for half an hour for the semolina to swell. Add slaked baking soda and let it sit for another couple of minutes. After that, knead the dough, form the syrniki, roll them again in the remaining semolina, and fry them in a pan.

4. Syrniki with Rice Flour
Rice flour is a savior for those who cannot consume gluten and wheat in any form.
You will need: 400 g cottage cheese, 1 tbsp each of rice flour, powdered sugar, and starch, 2 eggs, a pinch of salt.
Preparation: Whisk eggs with sugar and salt, add sieved cottage cheese, and mix. Add flour with starch, mix, and leave the dough in the refrigerator for 2-3 hours. You can even prepare it the night before for breakfast. Form and fry the syrniki in a pan as usual, but then bake them in the oven for 10 minutes at 200 degrees Celsius.
5. Syrniki with Coconut Flour
They differ slightly in consistency and appearance but turn out very tasty and aromatic.
You will need: 450 g cottage cheese, 20 g coconut flour, 30 g sugar, 2 eggs.
Preparation: Mash the cottage cheese or blend it, draining any excess liquid. Mix it with eggs, sugar, and salt, then add coconut flour and knead the dough.
Form and fry the syrniki with minimal oil, but flip them very gently – they are quite delicate. If you want a denser texture, bake them for another 7 minutes in the oven at 180 degrees Celsius.

It's hard to imagine a more nutritious and healthy protein breakfast!
You will need: 200 g cottage cheese, 3 eggs, 3 tbsp oatmeal, 3 tbsp sugar.
Preparation: Thoroughly mix the cottage cheese with eggs and sugar, then add oatmeal and knead the dough. You won't be able to form these syrniki as usual, so spoon them onto the pan. They fry for about one and a half minutes per side.

7. Syrniki with Bran
To make syrniki even more diet-friendly, use a sugar substitute.
You will need: 400 g cottage cheese, 2 eggs, 2 tbsp bran, 3 tbsp sugar, 7 g baking powder, vanilla.
Preparation: Thoroughly mix the dough made from sieved cottage cheese with the other ingredients. If using sugar substitute tablets – 4 tablets are sufficient. Dissolve them in 50 ml of water and add to the dough. Bake the syrniki in silicone molds until golden brown.
8. Protein Syrniki
Protein powder in syrniki is barely noticeable and leaves a pleasant aftertaste.
You will need: 250 g cottage cheese, 2 bananas, 2 tbsp protein powder, 2 eggs.
Preparation: Separate the egg whites and whisk them lightly, you won't need the yolks. Blend the cottage cheese with the banana and combine the mixture with the rest of the ingredients. These syrniki fry a little longer than usual – about three minutes on a non-stick pan.

Banana is an ideal ingredient for dough, and syrniki are no exception!
You will need: 400 g cottage cheese, 1 banana, 1 egg, 2 tbsp flour, 1 tbsp sugar, vanilla.
Preparation: Mash with a fork or blend the cottage cheese, egg, and bananas into a smooth mixture. Add sugar, vanilla, flour, and knead the dough. Banana syrniki are formed and fried like regular ones.

10. Syrniki with Nutella
Instead of chocolate spread, you can use thick boiled condensed milk.
You will need: 300 g cottage cheese, 1 egg, 1.5 tbsp semolina, 50 g flour, 1 tsp powdered sugar, Nutella.
Preparation: Mash the cottage cheese and mix it well with egg, semolina, and powdered sugar. Divide the mixture into equal parts and form syrniki, placing Nutella inside with a teaspoon. Roll each syrnik in flour and fry in a pan as usual.
11. Lviv Syrnik
This popular Ukrainian dessert has long spread beyond its native city and country.
You will need: 250 g cottage cheese, 90 g each of butter and sugar, 2 eggs, 50 g sour cream, 0.5 tbsp semolina, 1.5 tbsp cocoa, a handful of raisins, zest.
Preparation: Separate the yolks, whisk them with 3/4 of the sugar until pale, add sieved cottage cheese, semolina, and 2/3 of the softened butter. Knead the dough, add zest with raisins, and slowly fold in the egg whites beaten to stiff peaks.
Bake the syrnik for about 50 minutes at 180 degrees Celsius, and in the meantime, bring the glaze to a boil using sour cream, cocoa, remaining butter, and sugar. Place the syrnik with glaze in the refrigerator for 5 hours to set.

You will need: 400 g cottage cheese, 2 eggs, 3 tbsp semolina, 4 tbsp flour, 2 apples, 2 tbsp sugar, 0.5 tsp cinnamon.
Preparation: Mix cottage cheese with eggs, sugar, cinnamon, and a pinch of salt, add 3/4 of the semolina with flour. Peel the apples and cut them into small cubes, then add to the dough. Form the syrniki, roll them in the remaining semolina and flour, and fry in a pan.

13. Syrniki with Potatoes
Instead of potatoes, boiled carrots also work well for a complete main dish.
You will need: 200 g cottage cheese, 2 potatoes, 2 tbsp flour, 2 eggs, salt.
Preparation: Boil the potatoes and mash them together with the cottage cheese into a homogeneous mixture. You can also blend them or pass them through a meat grinder. Add egg, salt, flour, and knead the dough, then form patties, fry, and serve with sour cream and herbs.

15. Stewed Syrniki
Syrniki in a delicate sweet sauce require no additional toppings.
You will need: 600 g cottage cheese, 2 eggs, 3/4 cup flour, 4 tbsp sour cream, 100 g butter, half a cup of milk, 2 tbsp honey, 1 tsp salt.
Preparation: Rub the cottage cheese with 2/3 of the softened butter, add the pre-beaten eggs, flour, and salt, then knead the dough. Form and fry the patties like regular syrniki.
In a pan, melt the remaining butter, add honey, milk, sour cream, and mix the sauce. When it boils, add the syrniki and simmer covered for 3 minutes.
