Georgian Pickled Cabbage with Beets – A Delicious Recipe

Ingredients
- 1.5 kg white cabbage;
- 1 large carrot;
- 1 large beet;
- 1 head of garlic;
- 1 chili pepper;
- 100 g sugar;
- 100-120 ml 9% vinegar;
- 2 tablespoons salt;
- 10 black peppercorns;
- 2 bay leaves;
- 1 liter water.
Step-by-step recipe
- Bring water to a boil with sugar, salt, bay leaf, and peppercorns. Simmer this marinade for 2 minutes, remove from heat, and add vinegar.
- Shred or cut the cabbage into squares, grate the carrot and beet on a coarse grater, and finely chop the garlic and chili.
- Mix everything, place the prepared vegetables into a large three-liter jar, and pour the hot marinade over them. This way, the vegetables will absorb the spices faster and become tender, yet retain their crunch.
- Close the jar with a lid and leave it at room temperature for 1 day, then transfer to the refrigerator for storage.
