Prep time: 20 minutes.

Ingredients
- 300-400 g burrata;
- 600 g cocktail tomatoes or cherry tomatoes;
- 1 red onion;
- 100 g arugula;
- 3-4 sprigs of basil;
- 4 tablespoons pine nuts;
- 60-80 ml olive oil;
- 2 tablespoons balsamic vinegar;
- 2 tablespoons lemon juice;
- 2 cloves garlic;
- salt and ground black pepper.
Step-by-step recipe
- Press the garlic through a garlic press. Mix olive oil, balsamic vinegar, lemon juice, garlic, salt, and ground black pepper to taste. Let the dressing infuse for 10 minutes, then strain.
- Wash and dry the arugula, cut the tomatoes in half, and slice the onion into thin strips. Combine all these with the dressing.
- If you have small burrata balls, arrange the salad on plates and top with burrata. If you have one large burrata, beautifully arrange everything in a salad bowl and carefully slice the cheese.
- Sprinkle the finished salad with chopped basil and pine nuts. You can lightly toast the pine nuts in a dry pan beforehand to enhance their aroma.
