You will need: 4 cups ryazhenka, 2 eggs, 2 cups flour, 4 tbsp. vegetable oil, 1.5 tsp. baking soda, sugar, salt.

Preparation: Whisk eggs with sugar and salt to taste. Pour in room temperature ryazhenka, mix, and add sifted flour with baking soda. Finally, pour oil into the batter, let it rest for 15 minutes, and fry the pancakes on a lightly oiled pan.

You will need: 250 ml ryazhenka, 1 cup boiling water, 1-2 eggs, 1 cup flour, 1.5 tbsp. vegetable oil, 0.5 tsp. baking soda, 1 tsp. sugar, 2 pinches salt.

Preparation: Whisk eggs with sugar and salt. Add slightly warm ryazhenka and baking soda, mix, then add sifted flour. Pour in boiling water in a thin stream, constantly stirring the batter. Finally, pour in vegetable oil, let the batter rest for 10-15 minutes, and fry the pancakes on a heated pan on both sides.

For a more expressive and original taste, use baked milk.

You will need: 250 ml ryazhenka, 250 ml milk, 250 ml boiling water, 2 eggs, 250-300 g flour, 1 tsp. baking powder, 2 tbsp. vegetable oil, 30-40 g sugar, 2 pinches salt.

Preparation: Whisk eggs with sugar and salt. Pour in room temperature milk and ryazhenka, whisk again, then add flour with baking powder. Mix the batter until smooth. While stirring, gradually pour in boiling water, and then oil. Let the batter rest for 15 minutes at room temperature and fry thin pancakes.
