1. Uštipci

Uštipci are Serbian meatballs, but not quite ordinary ones.

You will need: 250 g ground pork, 50 g bacon, 50 g hard cheese, 1 chili pepper, 1 clove garlic, 1 tsp paprika, spices.

Preparation: Dice the cheese and bacon finely, chop the chili and garlic, and mix everything with the ground pork and spices. Leave the mixture in the refrigerator for half an hour, form into patties, and fry them on both sides in a pan.

Baked beans with sausages – delicious and hearty.

You will need: 300 g white beans, 700 g onions, 4 cloves garlic, 200 g hunter's sausages, 4 tomatoes, 1 bell pepper, 1 tsp paprika, spices.

Preparation: Soak the beans overnight in advance and boil until tender. Slice the onions into half-rings, and the garlic into thin slices, and sauté until soft. Mix with spices. Layer half of the beans in a baking dish, then a layer of onions, and repeat the layers. Top with sliced sausages and bell pepper strips. Pour over the tomatoes pureed in a blender, and bake everything in the oven for 1 hour at 180 degrees Celsius.

3. Serbian Koh

This pastry resembles our traditional semolina cake, but even more tender.

You will need: 3 eggs, 2 tbsp semolina, 2 tbsp flour, 4.5 tbsp sugar, 0.5 tsp baking powder, 250 ml milk, 1 pinch vanilla.

Preparation: Whip egg whites and 3 tbsp sugar until stiff peaks form. Add yolks one by one, continuing to whip. Then gently fold in the sifted flour with baking powder, and finally, the semolina. Pour the batter into a mold and bake the koh for half an hour in the oven at 180 degrees Celsius. Cut the hot cake into pieces and pour boiling milk with the remaining sugar and vanilla over it.

4. Vanilice

You will need: 250 g lard, 100 ml yogurt, 10 g vanilla sugar, 5 tbsp powdered sugar, 2.5-3 cups flour, 100 g jam to taste.

Preparation: Mix soft lard with powdered sugar, yogurt, and vanilla sugar. Gradually add flour, knead the dough, roll it into a sheet, and cut out small circles. Bake them on parchment paper for 10 minutes in the oven at 200 degrees Celsius, let cool, spread with jam, and join in pairs.

Preparation: Soak the beans in advance and boil until tender. Add a halved onion and carrot, quartered bell pepper, and garlic. Cook everything until soft over medium heat. Transfer the vegetables to a blender, pour in a glass of liquid, and puree. Meanwhile, add the sliced sausages to the beans. Also add the puree and spices, and simmer the soup for another 15 minutes over low heat.

6. Chicken Paprikash

You will need: 1 kg chicken, 3 onions, 1 L broth, 2 eggs, 150 g flour, 1 tbsp paprika, spices.

Preparation: Finely chop the onion and sauté until golden. Cut the chicken into pieces and fry on all sides, then season. Add the chicken to the onion, add paprika and other spices to taste, pour in broth or water, and simmer for 20 minutes over medium heat. Mix eggs with flour into a smooth dough and spoon dumplings directly into the boiling paprikash. Cook for another 7-10 minutes.

Preparation: Make incisions on the drumstick, insert pieces of garlic, and rub with spices and mustard. Roughly chop all vegetables, mix with spices, and place in a baking dish. Place the drumstick on top and drizzle with oil. Pour water halfway up the dish and bake the podvarak for 2 hours at 180 degrees Celsius in the oven.

Preparation: Chop the tomatoes. Separately chop all other vegetables and herbs, add spices and a couple of spoons of oil, and leave for 15 minutes. Place tomatoes in a baking dish, half of the vegetable mixture, and sliced lamb. Sprinkle with rinsed rice, and layer the remaining vegetables. Pour all the oil from the vegetables, pour in 2 cups of water, and cook the đuveč in the oven for 2 hours at 150 degrees Celsius.

14. Urnebes with Feta Cheese

You will need: 250 g feta cheese, 1 bell pepper, 3 cloves garlic, 2 tsp paprika, hot pepper, spices.

Preparation: Roast or bake the bell pepper until charred by any convenient method, peel off the skin, and finely chop. Similarly chop the garlic, mash the feta cheese, and mix everything. Season the urnebes to taste.

15. Serbian Sarma

An interesting version of stuffed cabbage rolls – especially for a festive table.

You will need: 1 head cabbage, 1 kg sauerkraut, 500 g each of ground pork and chicken, 6 smoked pork ribs, 2 onions, 1 cup rice, 800 g tomato sauce, spices.

Preparation: Boil the whole head of cabbage for 5-7 minutes in boiling water and cut off the leaves at the base. Remove the tough ribs from the leaves. Finely chop the onion, rinse the rice, and mix everything with spices, two types of minced meat, and 100 ml of water. Beat the minced meat and wrap a little filling in the cabbage leaves, like regular cabbage rolls.

Squeeze the sauerkraut and place it in a baking dish. Arrange the cabbage rolls on top, and place the pork ribs between them. Cover everything with the upper tough cabbage leaves, pour in tomato sauce and 200 ml of water, cover with foil, and bake in the oven for 1 hour at 180 degrees Celsius and then another hour at 160 degrees Celsius.

You will need: 500 g beef, 2 potatoes, 1 carrot, 150 g green beans, 1 onion, 300 g cabbage, 2 tomatoes, 1 bell pepper, 2 cloves garlic, 1 bunch herbs, 1 tbsp paprika, spices, 2 L water.

Preparation: Cover the beef with water, add spices for broth, and boil for about 1.5 hours until cooked. Remove the meat, chop it, and return it to the broth. Roughly chop the carrot, potatoes, and green beans, and add them to the pot. Cook for 15 minutes.

Finely chop the onion and tomatoes, and stew everything until mushy. Add the chopped bell pepper and shredded cabbage to the soup, and after 10 minutes, add the sautéed vegetables and spices. Cook the čorba for another 7 minutes, add chopped herbs with garlic, remove from heat, and let it steep covered.

17. Pogača with Feta Cheese

You will need: 350 g flour, 1 egg, 200 ml milk, 1 tsp dry yeast, 2 tsp sugar, 1 pinch salt, 20 g butter, 1 egg yolk, 350 g feta cheese, 1 bunch herbs.

Preparation: Mix warm milk, yeast, sugar, and salt. Add egg and melted butter, mix again, and gradually add sifted flour. Knead the dough, leave in a warm place for half an hour, then divide into 6 parts and roll out.

Mix crumbled feta cheese and chopped herbs. Place a layer of dough in a mold, sprinkle with feta cheese, cover with the next layer – and so on until the end. Brush the pogača with egg yolk and bake in the oven for 40 minutes at 180 degrees Celsius.

18. Marinated Serbian Bell Peppers

Korean cuisine isn't the only one rich in marinated vegetables!

You will need: 15 bell peppers, 5 cloves garlic, 100 ml olive oil, 100 ml wine vinegar, 2 tbsp sugar.

Preparation: Place the bell peppers on a rack and bake in the oven until charred at 200 degrees Celsius. Put them in a bag for 10 minutes, peel off the skin, and remove the seeds. Mix olive oil, vinegar, sugar, and crushed garlic, pour over the peppers, and let them marinate for at least an hour.

19. Serbian Burek with Minced Meat

Similar pies are also popular in Greece, Turkey, and Cyprus.

You will need: 3 cups flour, 300 ml water, 4 pinches salt, 200 g minced meat, 1 onion, 3 cloves garlic, 150 g Adyghe cheese or feta cheese, spices and herbs.

Preparation: Knead dough from flour, salt, and water, and leave for half an hour. Divide it into 4 parts, roll into flatbreads, and leave for another half an hour. Mix minced meat, chopped onion, garlic, spices, and herbs. Roll and stretch a flatbread almost until transparent, fold into an envelope.

Similarly stretch the second flatbread, and place the previous envelope on it – this is the bottom of the pie. Then place half of the minced meat, and on top of it – grated cheese. Fold everything into an envelope again, and repeat the previous step with the third flatbread. Wrap the burek in the last rolled-out flatbread without filling, brush with butter, and bake for half an hour at 200 degrees Celsius.

20. Proja

You will need: 1 cup flour, 1 cup corn grits, 1 cup milk, 3 eggs, 300 g feta cheese, 150 ml vegetable oil, 10 g baking powder.

Preparation: Blend milk with corn grits, and leave for half an hour. Add eggs, oil, crumbled feta cheese, and flour with baking powder. Knead the dough, pour into a mold on parchment paper, and bake the proja for half an hour at 180 degrees Celsius in the oven.
