Ingredients
- 1 kg potatoes;
- 500 g eggplants;
- 500 g zucchini;
- 500 g bell peppers;
- 500 g tomatoes;
- 200 g carrots;
- 2 large onions;
- 200 ml vegetable oil;
- 6 black peppercorns;
- smoked paprika to taste;
- salt to taste;
- 400 ml hot water.
Step-by-Step Recipe
- Cut eggplants, zucchini, carrots, tomatoes, peeled potatoes, and bell peppers into medium-sized pieces.
- Peel the onions and cut them into four parts.
- Heat the vegetable oil in a cauldron, add potatoes, carrots, and onions, and fry until golden.
- Then add eggplants, zucchini, tomatoes, and bell peppers. Cook for another 5 minutes, stirring gently.
- After that, pour in hot water or broth, add spices and salt. Stew the vegetables in the cauldron over the fire for about 30 more minutes. Done!
