How to Cook Rice for Sushi Burgers
Source: AdobeStockFor 100g of sushi rice or just short-grain rice, you will need 100-120ml of water, 1 tbsp rice vinegar, 1/3 tbsp sugar, and 1-2 pinches of salt to taste. Rinse the rice thoroughly, cover it with clean water, and bring to a boil.
Cook for 10-15 minutes with the lid on over low heat, then remove from the stove and let it sit for 10 minutes with the lid still on. Mix the vinegar, sugar, and salt, pour the resulting dressing into the hot rice, and mix thoroughly. Wait until the rice has completely cooled.
For one sushi burger, you'll need approximately 100-150g of cooked rice – this is enough for 2 “buns.” Be sure to shape them with wet hands! You can also skip shaping buns and layer everything in a culinary ring, like a layered salad. But it's better to do this directly on a nori sheet, into which you will then wrap the burger.

1. Sushi Burger with Crab Sticks and Shrimp

You will need: 4 rice “buns”, 2-4 nori sheets, 100g peeled shrimp, 25g crab sticks, 1/2 avocado, 15g capelin roe, 20g mayonnaise, 15g cream cheese, 20g breadcrumbs, 1.5 tbsp tempura batter mix, 2.5 tbsp water.
Preparation: Fry the shrimp until cooked through. Mix mayonnaise with capelin roe and grated or finely chopped crab sticks. Spread cream cheese on a rice patty and arrange avocado slices. Then add the shrimp, followed by the crab mixture.
Cover everything with a second rice patty and wrap each burger in a water-moistened nori sheet. Mix the tempura batter and water. Dip the sushi burgers into it, then into breadcrumbs, place on parchment paper, and bake for 15-20 minutes in the oven at 190 degrees Celsius.
2. Sushi Burger with Salmon and Avocado

You will need: 4 rice “buns”, 1 nori sheet, 150g lightly salted salmon, 50-60g cream cheese, 1/2 avocado, 1/2 cucumber.
Preparation: Spread cream cheese on 2 rice “buns” and layer salmon, avocado, and cucumber slices. Cover with the remaining “buns” and decorate with nori strips. If desired, coat the sushi burgers in breadcrumbs and fry in a pan until golden brown on both sides.

Preparation: Drain the liquid from the tuna and mix the canned fish with cream cheese. Mash the avocado with a fork and season to taste, slice the cucumber. Fry and slice an omelet from the egg. Place a rice patty on a nori sheet, add avocado, then the egg omelet, tuna, cucumber, and a second rice patty. Moisten the edges of the nori and wrap the sushi burger in it.

You will need: 4 rice “buns”, 2-4 nori sheets, 150g smoked chicken, 1/2 cucumber, 1/2 bell pepper, 2 iceberg lettuce leaves, 100g cream cheese, 2 tbsp mayonnaise, 1.5 tbsp tempura mix, breadcrumbs, chili sauce.
Preparation: Mix cream cheese, mayonnaise, and chili sauce to taste. Dice the smoked chicken, bell pepper, and cucumber finely, then mix this filling with the cheese mixture. Place a rice patty on nori, and on top of it, half an iceberg lettuce leaf. Then add all the filling, another half iceberg lettuce leaf, and a second rice patty.
Cover with a second nori sheet, moisten the edges, and wrap the sushi burger. Make a second one following the same principle. Prepare the tempura mix according to the package instructions and dip the sushi burgers into this batter. Coat them in breadcrumbs and bake for 15 minutes in the oven at 190 degrees Celsius or fry in a pan until golden brown.
