1. Yakisoba with Chicken and Vegetables

You will need: 200 g soba buckwheat noodles, 300 g chicken fillet, 60 g red onion, 1 carrot, 80 g Napa cabbage, 1/2 bell pepper, 2 cloves garlic, 1 tsp sugar, 3 tbsp soy sauce, 2 tbsp each of oyster sauce and dry white wine, 1 chili pepper.
Preparation: Cook soba according to package instructions and rinse with cold water. Thinly slice all vegetables, mince garlic and chili, cut chicken into strips. Fry chicken until golden brown and add vegetables with garlic.
Fry for another 1 minute, stirring. Mix both sauces, wine, and sugar until smooth. Heat and pour the sauce into the pan. Add noodles, mix everything together, and simmer for a little longer.
2. Yakisoba with Pork and Bell Pepper

You will need: 300 g soba noodles, 150 g pork, 50 ml soy sauce, 2 bell peppers, 2 carrots, 2 shallots, 3 cloves garlic.
Preparation: Cook soba according to instructions and rinse. Cut pork into strips and thinly slice all vegetables, mince garlic. Marinate pork in soy sauce and garlic for 15 minutes.
Sauté onions until translucent, add carrots, and after 4-5 minutes, add bell pepper. Fry everything together for another 5 minutes, add pork with soy sauce, and simmer covered until the meat is cooked. Add noodles and fry everything together for a little longer, stirring.

3. Yakisoba with Napa Cabbage and Chili Paste

You will need: 350 g soba noodles, 600 g chicken fillet, 3 carrots, 120 ml soy sauce, 400 g Napa cabbage, 1 onion, 2 cloves garlic, 2 tbsp chili paste, sesame oil.
Preparation: Cook and rinse noodles. Fry chili paste in sesame oil for 1 minute, add chopped garlic and mix. Add sliced chicken and fry for another half minute, stirring. Pour in half of the soy sauce, continue frying for 7-10 minutes, then set everything aside.
In the same pan, sauté shredded Napa cabbage with minced onion and carrots for 4-5 minutes. Add noodles, the remaining soy sauce, and chicken. Mix everything together and cook for another 2-3 minutes.
4. Yakisoba with Beef and Green Beans

Preparation: Cut beef into strips and marinate for half an hour in half of the soy sauce with spices. Thinly slice carrots and bell pepper, break broccoli into small florets. Fry beef over high heat for about 5 minutes, stirring. Add carrots and after 5 minutes, add bell pepper.
Separately boil and rinse noodles with cold water. Add broccoli and green beans to the beef, and cook for another 3-4 minutes covered. Mix the remaining soy sauce, chili, tomato paste, and spices to taste. Add noodles to the pan, pour in the sauce, mix, and remove from heat.

5. Yakisoba with Shrimp and Mushrooms

You will need: 300 g chicken, 400 g soba buckwheat noodles, 200 g bacon, 300 g shrimp, 200 g squid, 400 g cabbage, 150 g bean sprouts, 1 bell pepper, 1 carrot, 3 leeks, 140 ml soy sauce, 2 tsp each of chili paste and hot sauce, sesame and vegetable oil.
Preparation: Roughly chop all ingredients. Boil and rinse noodles with cold water. Mix soy and hot sauce with chili paste. Fry noodles for 5 minutes in sesame oil over high heat and set aside.
In vegetable oil, fry chicken and bacon for 5-7 minutes, add onion, carrot, and bell pepper, and cook for another 5 minutes over high heat, stirring. Add seafood and cook for another 5 minutes. Add cabbage and sprouts, and fry again for 5 minutes. Add noodles, pour in the sauce, mix, fry yakisoba for another 3-5 minutes, and remove from heat.
