Ingredients
- 400 g zucchini;
- 200 g bell pepper;
- 100 g tomatoes;
- 1 medium carrot;
- 1 medium onion;
- 1 clove garlic;
- a couple of sprigs of any fresh herbs;
- 2 tablespoons vegetable oil;
- ground black pepper to taste;
- salt to taste.
Step-by-Step Recipe
- Dice the zucchini, tomatoes, carrots, peeled onion, and bell pepper.
- Place the vegetables in a bowl, salt them, and let them sit for 10-15 minutes. After this time, drain the released juice.
- Finely chop the herbs and peeled garlic.
- Heat the vegetable oil in a frying pan, add the onion and carrots, and sauté until golden brown.
- Add the bell pepper and continue to sauté for another 5-7 minutes.
- Add the tomatoes and continue cooking for 10 minutes, stirring gently.
- Add the zucchini and simmer the caviar over low heat until all the liquid has evaporated.
- After that, season with salt, ground pepper, garlic, herbs, and remove from heat.
- The finished zucchini caviar can be served as a standalone dish or as an appetizer with side dishes or meat. It pairs especially well with black bread.
