1. Scallop and Mozzarella Salad

You will need: 200 g scallops, 50 g mixed greens, 80 g cherry tomatoes, 80 g mozzarella balls, 1 clove garlic, 3 tbsp olive oil, 1 tbsp lemon juice, 1.5 tbsp balsamic vinegar, 1 pinch sugar, Tabasco sauce, salt, ground black pepper.
Preparation: Drizzle scallops with lemon juice, season with salt and pepper, and let marinate for 20 minutes. Then, sear them with crushed garlic for about half a minute on each side, set aside, and let cool. Halve the cherry tomatoes and mozzarella balls and arrange everything on the mixed greens. In a separate bowl, combine olive oil, balsamic vinegar, Tabasco, sugar, salt, and ground pepper to taste. Drizzle the salad with the prepared dressing.

You will need: 150 g scallops, 10 quail eggs, 2 handfuls arugula, 1.5 tbsp olive oil, 1.5 tbsp lime or lemon juice, grated ginger, salt, ground black pepper.
Preparation: Sear the scallops until cooked through – just 1-2 minutes. Boil and peel the quail eggs, then halve them. Mix olive oil, lime or lemon juice, a little grated ginger, salt, and ground black pepper to taste. Drizzle the arugula with this dressing, then arrange the eggs and scallops on top.

3. Scallop Salad with Pear and Brie Cheese

You will need: 200 g scallops, 120 g cherry tomatoes, 1 pear, 100 g mixed greens, 40 g Brie cheese, 2 tbsp pine nuts, 2 tbsp olive oil, 1 tbsp butter, 1 tbsp sesame oil, 1 tbsp lemon juice, salt.
Preparation: Mix olive oil, sesame oil, lemon juice, and salt for the dressing. Roughly chop the pear and tomatoes, mix them with the mixed greens, and drizzle with the dressing. Sear the scallops in butter in a pan until golden brown, add to the salad, then sprinkle with pine nuts and crumbled Brie cheese.

You will need: 200 g scallops, 3-4 tomatoes, 1 red onion, 1 lemon, 3 tsp whole grain mustard, 1 tsp olive oil, salt, ground black pepper.
Preparation: Slice half a lemon, place in a bowl, and add the thawed scallops. Season with salt and pepper, mix, and let marinate for 20 minutes. Separately, slice the tomatoes into rounds and the red onion into thin strips, arrange everything on plates. Add the scallops, lemon slices, and whole grain mustard, and drizzle the salad with olive oil.

5. Scallop and Bacon Salad

You will need: 150 g scallops, 80 g bacon, 50 g mixed greens, 15 g butter, 2 tbsp olive oil, 1 tsp lemon juice, 0.5 tsp whole grain mustard, 0.5 tsp honey, salt, ground black pepper.
Preparation: Place bacon slices on parchment paper and bake for 10-15 minutes in the oven at 200 degrees Celsius. Meanwhile, sear the scallops in butter in a pan. Separately, mix the dressing ingredients, drizzle over the mixed greens, then arrange the bacon and scallops on top.

9. Scallop and Radish Salad
