The simplest compote – just zucchini and your favorite spices.

You will need: 700 g zucchini, 400 g sugar, 5 cloves, 1 star anise, 1 cinnamon stick, 2.5 liters water, 2 tsp vinegar.

Preparation: Cut the zucchini into cubes, sprinkle with sugar, pour in water, and boil for 5 minutes after it comes to a boil. Add all spices 2 minutes before the end. Finally, pour in the vinegar, pour the zucchini compote into sterilized jars, and seal for winter storage.
