At this stage, add the thinly shredded fresh cabbage and lightly squeezed sauerkraut. Reduce the heat and simmer everything covered for about half an hour. Add the rinsed, chopped prunes, simmer for another 10 minutes, and remove the bigos from the heat.
2. Bigos with Fresh Cabbage and Meat

Preparation: Cut the fresh cabbage into small squares, slice the onion into feathers, and grate the carrot. Slice the mushrooms, peel the tomatoes and finely chop them. Pour boiling water over the prunes for 10 minutes, pat dry, and also chop them.
Fry the onion and carrot for a couple of minutes, then add the fresh cabbage. Continue cooking for about 15 minutes over medium heat. Add the mushrooms, tomatoes, and squeezed sauerkraut. Simmer everything for another 15 minutes covered. Add the prunes and chopped herbs, season to taste, and after 5 minutes, remove the bigos from the heat.

4. Lenten Bigos with Rice and Vegetables

You will need: 500 g fresh cabbage, 1 cup rice, 1 onion, 1 carrot, 1 celery stalk, 1 bell pepper, 1 tbsp tomato paste, 2 cloves garlic, 30 g cilantro, salt, sugar, and spices to taste.
