1. Classic Krasnodar Sauce

You will need: 1.5 kg tomatoes, 500 g apples, 4-6 cloves garlic, 2 tsp sugar, 1 tsp salt, 3 tbsp vinegar, 8 tbsp water, 1 tsp ground black pepper, 6 clove buds, 10 allspice berries, 0.5 tsp ground cinnamon, 0.5 tsp nutmeg.
Preparation: Chop the tomatoes, add 4 tbsp water, simmer for about 20 minutes until soft, then remove the skin and puree the pulp using any convenient method. Repeat the same with peeled and chopped apples. Mix both purees and simmer together for another 20-25 minutes over low heat.
Place all spices in a cheesecloth bag and add it to the sauce. Stir in sugar and salt, and simmer for another 10 minutes. At the end of cooking – add minced garlic, and after another 5 minutes, remove the spice bag, strain the sauce through a sieve, pour in the vinegar, bring everything to a boil again, and seal in sterilized jars for winter.
2. Krasnodar Sauce with Apple Cider Vinegar for Winter

You will need: 2 kg tomatoes, 6-8 apples, 10 tbsp vegetable oil, 3-5 tbsp apple cider vinegar, 4 tsp sugar, 4 tsp salt, 3 tsp paprika, spices.
Preparation: Wash, peel, and chop the apples and tomatoes. Pass the tomatoes through a meat grinder or chop them using any convenient method, bring the tomato puree to a boil, and add the apples.
Stir in salt, sugar, and all spices to taste, and reduce the sauce for about 1 hour over low heat, stirring occasionally. When the mixture has reduced by half, strain the sauce through a sieve, pour in the vegetable oil and vinegar, bring to a boil again, and seal in sterilized jars.

3. Krasnodar Sauce with Hot Pepper for Winter

You will need: 1.5 kg tomatoes, 500 g apples, 2 onions, 2-3 chili peppers, 4-6 cloves garlic, 30 ml apple cider vinegar, 1.5 cups sugar, 2 tbsp salt, 2 tsp paprika, 1 tsp ground black pepper.
Preparation: Roughly chop the tomatoes, apples, onions, garlic, and chili peppers. Place everything in a pot, bring to a boil, and simmer for 20-25 minutes over low heat, stirring. Then, blend the mixture until smooth, and you can also strain the sauce through a sieve if desired.
Add salt, sugar, and spices, bring to a boil again, and cook for another 15 minutes. Pour in the vinegar, stir, and seal the finished Krasnodar sauce in sterilized jars for winter.
4. Zucchini in Krasnodar Sauce for Winter

You will need: 1.5 kg zucchini, 1 head garlic, 250 ml ready-made Krasnodar sauce, 1/2 cup vegetable oil, 15 ml vinegar, 1/2 cup sugar, 0.5 tsp salt, spices.
Preparation: Cut the zucchini into cubes or thin slices. Add vegetable oil, Krasnodar sauce, vinegar, salt, and sugar, bring to a boil, and simmer for 40-45 minutes over low heat, stirring. Add minced garlic and spices to taste, cook for another 10-15 minutes, and seal everything in sterilized jars for winter.

5. Cucumbers with Onions in Krasnodar Sauce for Winter

Preparation: Soak the cucumbers in cold water for 1 hour, then slice them into rounds. Slice the onion into rings and the garlic into slivers. You will need: 1.5 kg zucchini, 2 carrots, 2 onions, 500 ml tomato juice or puree, 250 ml ready-made Krasnodar sauce, 2 tbsp vinegar, 100 ml vegetable oil, 1/2 cup sugar, 1 tbsp salt, spices.
Preparation: Grate the carrots on a Korean grater, finely chop the onions, and slice the zucchini into rings or half-rings. Place everything except the zucchini in a pot, and simmer for 20 minutes after boiling over low heat. Add the zucchini, simmer for another 15 minutes, and seal in sterilized jars for winter.
7. Eggplants in Krasnodar Sauce for Winter

You will need: 2 kg eggplants, 1 kg tomatoes, 4 apples, 2 heads garlic, 200 ml vegetable oil, 100 ml apple cider vinegar, 1 tbsp sugar, salt, spices.
Preparation: Slice the eggplants into 15-20 mm rings, salt them, leave for 20 minutes, then fry in a pan until golden brown on both sides. Separately, peel and pass the tomatoes and apples through a meat grinder, add minced garlic, vegetable oil, apple cider vinegar, sugar, salt, and spices to taste. Bring the resulting Krasnodar sauce to a boil. In clean, dry jars, layer the eggplants and sauce, sterilize the preparations for another 20 minutes, and seal for winter.

You will need: 3 kg cucumbers, 4 cloves garlic, 200 g ready-made Krasnodar sauce, 20-30 ml vinegar, 1.5 L water, 200 g sugar, 3 tbsp salt.
Preparation: Soak the cucumbers in cold water for 1-2 hours and then tightly pack them into jars along with the garlic. You can also add cherry leaves, currant leaves, dill, or spices to taste.
Prepare the marinade from the remaining ingredients, boil for 5 minutes, pour it over the cucumbers, and sterilize the preparations for another 10-15 minutes in a pot of boiling water. Seal for winter.
