Zucchini Fritters Without Eggs in a Pan – Step-by-Step RecipeSource: Anzhela, AdobeStock

Even without eggs, zucchini fritters can turn out soft, tender, and hold their shape well. The key is the right proportions of ingredients and a few small tricks. These fritters are perfect for a lean or vegetarian menu, and they'll also come in handy if you simply run out of eggs at home. We're sharing the best recipe!

Preparation time: 30 minutes.
Servings: 8.

Ingredients

  • 800 g young zucchini;
  • 120-150 g wheat flour;
  • 2 cloves garlic;
  • 3 sprigs dill;
  • 1/2 teaspoon salt;
  • ground black pepper to taste;
  • vegetable oil for frying.

Step-by-Step Recipe

  1. Grate the zucchini on a coarse grater, salt, let stand for 10-15 minutes, and gently squeeze out excess liquid with your hands.
  2. Add minced garlic, finely chopped dill, ground black pepper, and gradually add the flour. Mix until a homogeneous thick batter is formed. You can also add spices or aromatic herbs to taste.
  3. Spoon the batter onto a heated pan with oil and fry the zucchini fritters for 3-4 minutes on each side over medium heat.
  4. Transfer the cooked fritters to a paper towel to remove excess oil. Serve hot with sour cream, garlic sauce, or fresh vegetables.
