It's a green, often cold soup made with bread kvass or another liquid base. It's prepared using beet greens or other herbs. We're sharing 15 excellent recipes!
1. Botvinya with Beet Greens

You will need: 2 beets with greens, 1 carrot, 1 onion, 1 boiled egg, 1 potato.
Preparation: Place peeled beets and onion in boiling water, boil until beets are tender. Discard the onion, and grate the beets. Lightly fry the chopped carrot. Add chopped potatoes to the beet broth, and after 5 minutes, add the carrots and chopped greens. After another couple of minutes, return the beets to the pot. Add the boiled egg before serving.

You will need: 2 liters of broth, 2-3 bunches of chard, 2 beets, 2 carrots, 3 potatoes, 1 onion, 3 tomatoes, 1 bell pepper, 3 cloves of garlic, spices.
Preparation: Grate carrots and beets, and fry with onion until soft. Add tomatoes pureed in a blender, spices, and chopped garlic. Simmer for 5 minutes. 4. Botvinya with Nettle

You will need: 1 liter of kvass, 250 g boiled chicken or fish, 250 g nettle, 250 g sorrel, 2 cucumbers, 2 boiled potatoes, 1 boiled egg, 50 g green onions, half a bunch of cilantro, spices.
Preparation: Boil nettle and sorrel for about 15 minutes over low heat and rub through a sieve. Mix with spices and kvass. Finely chop the remaining ingredients and pour the kvass mixture over them.

Preparation: Peel beets, bake in foil for about 45 minutes at 200 degrees, and cut into thin strips. Thinly slice the onion, pour vinegar over it, add sugar and salt, and let sit for half an hour. Mix with beets and kvass.

Preparation: Dice bacon finely, lightly fry, and set aside. Chop carrots, beets, and root vegetables, and fry in the same pan. Transfer everything to a pot, cover with broth, and simmer for 15 minutes with the lid on after boiling. Add chopped chard and spices. Cook the botvinya for another 4 minutes.
