1. Classic Mochi

You will need: 350 g rice flour, 200 ml water, 200 g sugar, 2 drops vinegar, 100 g jam or other filling.
Preparation: Mix the rice flour with water and sugar until smooth. Add vinegar during the process. Form flat cakes from the dough, place a little filling on each, and roll into balls. Refrigerate the finished mochi for 30 minutes.

Preparation: Mix water, vinegar, rice flour, and powdered sugar. Place the dough in a bowl in the microwave for 2 minutes at 750 W, covered. Stir again and microwave for another 1.5 minutes. Let the dough cool slightly, divide into portions, form flat cakes, place jam on each, and roll into balls.
3. Chocolate Mochi

You will need: 170 g rice flour, 250 ml milk, 130 g sugar, 4 tsp coconut oil, 1 tsp cocoa, 100 g mascarpone or jam.
Preparation: Heat the milk in a saucepan, without bringing it to a boil. Dissolve the sugar in it, add cocoa, stir, and remove from heat. Gradually add the rice flour, mix the dough, and return it to the stove.
Cook over low heat until thickened. Roll it into a sheet and let it cool. Form small flat cakes, place the filling on each, and seal the edges into a ball.

4. Steamed Mochi

Preparation: Mix the dry ingredients, pour in the milk, and mix until smooth. Microwave everything, covered, for 2 minutes at 750 W. Stir and microwave again for 2 minutes. Add the butter, stir the dough again, and let it cool. Form flat cakes, place a strawberry or other filling on each, and seal all the edges.
6. Matcha Mochi

You will need: 100 g rice flour, 190 ml milk, 230 g white chocolate, 5 g gelatin, 300 ml heavy cream, 13 g matcha, 100 ml water.
Preparation: Melt white chocolate in milk, add gelatin, matcha, and heavy cream whipped to stiff peaks. Mix everything until smooth, let it cool, and form small balls from this mixture.
Separately, mix rice flour and water. You can add a little matcha here too. Roll out the dough into a thin sheet, cut into pieces, and wrap each piece around the filling. Refrigerate the mochi for a couple of hours.

7. Mochi with Ice Cream

You will need: 160 g rice flour, 240 g ice cream, 60 g sugar, 225 ml water, 80 g cornstarch.
Preparation: Place 12 equal scoops of ice cream on parchment paper and put them in the freezer. Mix rice flour, sugar, and water, then cook the dough over a double boiler for 20 minutes, stirring. Or microwave it, covered or wrapped, for 1 minute at 750 W. Then stir and microwave for another minute.

Preparation: Mix rice flour, salt, and sugar, pour in water, and knead until smooth. Cover the dough in a bowl with plastic wrap, make a small hole in it, and microwave for 3 minutes on medium power. You can also cook the dough over low heat, stirring, until thickened.
Stir the mixture again, roll out the dough into a thin sheet, and cut into pieces. Form a flat cake from the bean paste. Wrap a piece of banana in it. Then, similarly, wrap everything in a sheet of rice dough and refrigerate the mochi for 1-2 hours.
